Coava.
A place to begin.

NOVEMBER 2026 · PORTLAND, OREGON

A familiar flavor or a different direction? This month, start your next coffee search with Coava.

Coava traces its beginnings to Matt Higgins’s North Portland garage in 2008. Its name refers to green, unroasted coffee. In the roaster’s own account, finding good coffee at origin and building enduring producer relationships came before everything else.

That gives us a useful question for a new bag: what can its page tell us about the coffee before we brew it? Look for the producer, place and processing information alongside the tasting notes. They offer context, even when the flavor words are unfamiliar.

TWO DIRECTIONS TO EXPLORE

Start with what sounds good to you.

A chocolate direction: S.O. Blend

Coava lists coffees from Colombia, Brazil and Ethiopia, with dark caramel and chocolate notes. The product page offers Drip and Espresso roast choices. Select for your brewing method.

A floral direction: Edido

Coava identifies this as a washed Ethiopian coffee from Yirgacheffe and lists bergamot, Meyer lemon and lavender notes. Read its producer and processing details before choosing your roast option.

Give the next bag a fair comparison.

Choose one coffee that fits how you like to brew. On the bag or your notes, record the coffee name, roast date and opening date. Start with a repeatable recipe and keep the coffee and water amounts steady. When you adjust the brew, change one thing and write down what you notice.

You do not need to find every flavor named on the label. Your notes can be as simple as “more sweetness as it cooled” or “try a slightly coarser grind next time.” Those are prompts for your own experiment, not claims about these coffees.
